For Ramadan specifically, buy Khalal (yellow, firm, crunchy, 40–60% moisture). Rutab (semi-soft, amber) is a secondary line for pastry and fresh retail. Tamar (fully dried) is year-round retail, not Ramadan. Specify the stage on every PO — Khalal is not interchangeable with Tamar.
